Now that sweater weather is officially underway, it’s time to start baking some comfort foods.

Recipe #1: Pumpkin Spice Cake

What is better than a cake with only 3 ingredients? If you are needing a last minute dessert to bring for an event or dinner, with this recipe you can have yourself a yummy pumpkin spice cake, that only requires minimal effort. 

Ingredients 

  • 1 box of spice cake mix 
  • 1 (15oz) can of pumpkin puree 
  • Store bought Vanilla Frosting 

Directions 

  1. Preheat oven to 350 F
  2. Mix together the spice cake mix and pumpkin puree till combined 
  3. Pour the batter in pan of choosing and bake for 25-30 minutes 
  4. Cool the cake completely and frost it 

Recipe #2: Chocolate Chip Pumpkin Cookies

If you want a yummy, warm cookie for the fall, these are the ones to make right away. Easy steps and bakes in only 12 minutes!

Ingredients 

  • 1 cup of pumpkin puree 
  • ½ cup of granulated sugar 
  • ½ cup of brown sugar 
  • 1 tsp of vanilla extract 
  • 1 egg 
  • 1 cup of all-purpose flour 
  • 2 tsp of baking powder 
  • ½ tsp of salt 
  • ⅛ tsp of cinnamon 
  • ⅛ tsp of nutmeg 
  • 10 oz of chocolate chips (mini chocolate chips taste better) 

Directions

  1. Preheat oven to 350 F
  2. Mix together pumpkin puree, white sugar, brown sugar, vanilla and the egg
  3. In another bowl, mix together flour, baking powder, salt , cinnamon, and nutmeg 
  4. Slowly pour the dry ingredients into the wet ingredients and mix until combined.
  5. Stir in the chocolate chips 
  6. Spoon 1-2 tbsp cookies onto the baking sheet (optional: top with flaky sea salt)
  7. Bake for 12 minutes  

Recipe #3: Pumpkin Donut Drops 

This is your chance to make pumpkin doughnut holes from scratch. Without boiling oil, dropping them in perfectly, and all cooked perfectly, these are baked in the oven. Easy and perfect for any night, even better dipped in melted chocolate.

Ingredients 

  • 1 ¾ cups all-purpose flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ⅛ teaspoon ground cloves
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup pumpkin puree
  • ½ cup milk
  • ½ cup brown sugar
  • ⅓ cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Cinnamon Sugar Topping 

  • 2 tbsp of ground cinnamon 
  • Pinch of nutmeg 
  • ⅔ cup of sugar 
  • 4 tbsp of melted unsalted butter 

Directions

  1. Preheat oven to 350 F and line or butter a muffin tin 
  2. Combine flour, cinnamon, nutmeg, all spice, baking powder and salt 
  3. In a separate bowl, combine the pumpkin puree, milk, brown sugar, canola oil, egg, and vanilla
  4. Pour the wet mixture over the dry ingredients and mix till just combined 
  5. Scoop the batter evenly into each muffin tin and bake for 10-12 minutes 
  6. Cool for 2 minutes and dip them into the cinnamon sugar mixture 

Recipe #4: Air-Fryer Cookie Pie 

Now this one is for my air fryer girlies who want an easy yummy dessert but don’t want to put on the oven and dirty pans.

Ingredients 

  • ½ cup of unsalted butter,cubed 
  • ½ cup of sugar 
  • ½ of brown sugar packed 
  • 1 large egg, Room Temperature
  • 1 Tbsp of vanilla extract 
  • 1½ cups of all-purpose flour
  • ½ tsp of sea salt (can substitute for regular salt)
  • ½ tsp of baking soda 
  • 1 cup of brickle toffee bits 
  • ½ cup of nutella or cookie butter 
  • Confectioners sugar for topping 

Directions 

  • In a small saucepan, heat up sugar over medium heat until golden brown. Transfer into a bowl and cool 
  • Preheat airfryer to 350F 
  • Add sugar into butter and beat till crumbly 2 minutes 
  • Beat in vanilla and egg 
  • In another bowl mix flour, baking soda, and salt. After add in slowly to wet ingredients
  • Fold in toffee bits 
  • Press half the dough into the pan and up the sides like pie crust and add nutella or cookie butter then add in the rest of the dough. Pinch the edge to seal 
  • Cook for 10-12 minutes, after cooling in the pan for 10 minutes before removing and dust with confectioners sugar.
